Portuguese cuisine evolved from hearty peasant food drawn from the seafood of the country’s abundant coast and the pork raised on the limited grazing land of its interior.
Many soups are main dishes, including sopa de marisco (shellfish soup cooked and served with wine) and caldo verde (green soup with kale leaves).
Other specialities of Portuguese food are caldeirada, a stew with several types of fish, and carne de porco a Alentejana, pork covered with clam and tomato sauce. Portuguese wine improved considerably over last decade. Brandies are also good. |

Bacalhau a gomes de sa, cod with potato, egg and olives.
pasteis de bacalhau (cod cakes), served almost everywhere. A popular alternative to cod are sardines, said to be the best eating in the world, and, without which, a Portuguese barbecue would not be considered complete.
cale verde: a broth of kale and potato and often served with chouriço (a spicy pork sausage)
sopa de castanhas peladas: bean, rice and chestnut soup, great on a cooler day
sopa mariscos: seafood bisque.

In the Algarve, the local dishes are centred on shellfish & sweet marzipan or fig pastries, although you are more likely to find international restaurants than anywhere else other than Lisbon and Oporto.
In the landlocked Montanhas region of Portugal, the only fish are eels and trout, though they are both good and widely used. However, the emphasis is more on strongly flavoured veal sausages (alheiras), game birds and smoked ham.
In the other northern region of Portugal, the Costa Verde, shad, whiting, lamprey & a host of other fish join the ever-present cod. Oporto’s most famous speciality is its tripe dishes, an acquired taste & a possible explanation why the city is famous for its fortified wines.
